Many of you know Richard Geoffroy from his 28 years as chef de cave (chief winemaker) for Dom Pérignon Champagne.
What many don’t yet know is that after Richard ‘retired,’ he:
- Bought property in Toyama, Japan
- Built a state-of-the-art brewery (the first in 60 years)
- Launched an ultra-premium sake brand known as IWA
These sakes are produced in various “Assemblages” to highlight the unique flavor profiles that can be achieved through different:
- Rices
- Yeasts
- Fermenting and aging techniques
We will have the distinct privilege of drinking three of Richard’s unique assemblages:
- Assemblage 2
- Assemblage 3
- Assemblage 4
But first, we will enjoy our canapés and passed hors d’oeuvres with one of Richard’s last vintages of champagne – the 2015 Dom Pérignon.

Richard intends to revolutionize sake drinking worldwide because he firmly believes that the right type of sake – in this case, his ultra-premium IWA assemblages – pairs with most world cuisines, not just Japanese food.
To prove this point, we have selected Kebab aur Sharab and its Michelin-starred chef, Salil Mehta, to curate a unique dining experience, thoughtfully pairing three of the IWA assemblages with a multi-course Indian feast.
The Value of This Exclusive Event
- 2015 Dom Pérignon Champagne is already valued at $250 per bottle.
- Each IWA assemblage retails for just under $200 per bottle.
- Salil Mehta’s multi-course meal would easily cost $150 per person (before tax and tip).
